Honestly, the World's Awesomest Homemade Granola Bars

I don't normally do recipes but this recipe is too good not to share with you girls! My friend shared this awesome recipe for homemade granola bars on her blog.I made them  for my girls. Now, I happen to be obsessed with making and feeding to my girls, and grabbing a nibble myself too! There is something reassuring and organic about  making food with love for your children and knowing what's in it, no preservatives!So, I tried this recipe once  a few several times , its a big hit in our house. In fact, I just made a big batch for this weekend! My girls are so excited, we have a blast making it together and then we enjoy it as a snack with a huge glass of organic milk(Can't do the hormones for my girls..but that is an entirely different post!) It's also super awesome as a topping on French Vanilla yogurt! You know me, if its good for my readers and our kids, I've got to share. Below is the recipe! Enjoy!
RECIPE
  • 2 cups rolled oats
  • 1 cup brown rice flour
  • 3/4 cut shredded coconut
  • 1 Tablespoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 3/4 cup maple syrup
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1/2 cup semisweet chocolate chips or raisins or other dried fruit of your choice!

Mix all of the ingredients together in a bowl.




 Line 9x13 pan with foil and spread mixture.



Bake at 350 for 20-25 minutes, let cool a bit and then cut into squares.
Wrap in cling wrap and eat with in about a week. They are still good after a week, but dry out a bit and become  crumbly.

Going Green; every purple and pink step of the way

I did such a great job on Earth Day that my little girls have been following me around constantly reminding me to give them the recyclables...because Heaven forbid they accidentally find their way into the actual garbage. That's good, I am proud of them. For 2 and 5 they are pretty amazing and very planet friendly conscious.They have also become very big fans of the "if its yellow let it mellow way of life!" This irritates my husband to no end. He screams , my five year old graciously explains about conserving water to save the world. Seriously, how can he argue? Now, I promised to hang a line and use the dryer as little as possible. So we have been hanging laundry all week.It's been beautiful out and who could resist. I am sure my neighbors think I am either trashy or a little hippie, either way, my linens smell amazing. Hope my homeowners association doesn't come gunning for me! Today we hung out a load and it made me giggle. All you could see was a sea of pink and purple. Yep, two little planet conscious princesses live here.



This year instead of flowers, we are planting our own butterfly, flower garden and instead of chocolates, we are planting our very own vegetable garden. The girls are super excited and so am I! Now, that being said...Mommy would still love some diamonds :) You know what they say? And who can't use a few more friends?
